I hope everyone is enjoying the change in weather.  Spring is a great time to start fresh and focus on new goals.  However many of us are being challenged in different ways. To maintain health and well being, managing stress is key.

Regain the Shape of your Youthful Face
 
As we age, the structure of our face slowly begins to change.  When we are younger, our facial structure is more of an inverted triangle, with the fullest part of our face in our cheeks with a natural tight jawline.  This occurs because there is adequate collagen and elastin production to maintain the skin as well as the deep subcutaneous fat around the "apples" of the cheeks.  
 
After the age of 30, along with stress, sun damage, and smoking, we begin to produce less collagen and elastin.  This causes the skin to thin and develop fine lines and wrinkles.  Also, gravity begins to slowly pull the fat down toward the lower cheeks and jawline.  As time goes on, the inverted triangle turns more into a square or a rectangle.  (Go ahead and check to see if you are an inverted triangle or a square/rectangle).  As we approach our 60's the jowls become the largest part of our face.  The end result is that we have an upright triangle rather than the inverted triangle we started with as a young person.

Adrenal Fatigue 
 
The adrenal glands are mainly responsible for regulating the body's stress response.  One of the main tasks of the adrenal glands is to rush all your body's resources into "fight ot flight" mode by increasing production of adrenaline and other hormones.  This is the acute stress response that enables you to finish your work on time, finish a long workout or fight a cold. 
 
However, when the stress continues for a prolonged period of time, the adrenal gland fatigues and is unable to produce enough of the critical hormone, cortisol, that helps you deal with stress. In essence, you have burned out the adrenal glands for a short period of time leading to symptoms of fatigue, poor sleep, lack of energy and maybe even depression.  
 
The treatment is aimed at restoring the adrenal gland with hormones and nourishing vitamins for a short period of time so that it starts working again.  The more important part of the solution is: How do we prevent this from occuring in the first place?  The answer: manage your stress better by exercising regularly, following a low glycemic diet, taking the proper supplements, using Holy Basil (an aryuvedic plant that helps decrease the negative effects of cortisol) and practicing meditation.

The Truth About Cooking Spray
 
 Have you ever wondered why olive oil cooking spray has 0 calories and 0 fat?  How can that be when it has olive oil, soy lecithin, water, and a propellant?  
 
Well, the secret is there is a law that protects trans fats from being recorded in certain situations.  If the food contains less than 1/2 gram of a given macronutrient per serving, the manufacturers are able to round down the value to the next lowest integer. 
 
For cooking spray, a standard serving is a 1/3 second spray. This will be less than 0.5 gram of olive oil so the claim of 0 calories can be, by law, substantiated.  However, as with most serving sizes, the serving size does not correlate with the amount consumed as most people will spray for one to two seconds if not more! So you are consuming trans fats!!
 
So what to do?  It depends on what you want the dish to taste like as well as the texture.   Olive oil is a great source of oleic acid and taste great.  A cooking spray can be used and will give a lighter texture, but know that it will have calories and is not fat free. Use of organic olive oil spray is the healthiest choice.
